Taller Intensivo Pasteleria en Risk / Pastry Workshop at Risk

Hi all just yesterday I started a workshop at Escuela de Cocina Risk with Chef Maribel Risk. As some might know from previous posts I have already taken several courses at the institute such as chocolates, molecular gastronomy, sushi, enology, cakes and fondant. Many may be wondering why I’m taking another pastry course if I already know all this. The answer is quite simple, like I told a very dear friend that happened to be at the workshop last night, I have to keep updating and learning different techniques!

Sure they are the same recipes that I already have tried, tested and have even made thousands of times. I might even recite them by heart just like I would times table. But many culinary processes have changed and are now simpler. Many dishes that during the past would take us hours on end to make and not to mention the mounds of dirty dishes to clean up afterwards are now easier and less messy to make. I was able to prove to her how helpful this works shop was. We made a genoise cake out of one bowl. In the past a sponge cake would have taken me at least two bowls and having to beat the yolks with the sugar and then the fold in the whipped egg whites etc, etc, hughh I get tired just thinking about it. By the time I had finished I would end up with a few dirty bowls and at least three dirty whisks. But not last night we made everything from a single bowl! We ended up making Zuppa and a strawberry filled jelly roll which were very good and pretty too!! Till next Friday that I will post more on what we have learned at our workshop!

It seems like everything mini is in!
Could it be that we are taking more care of what we eat, is it the economy or is it the fact that every sweet looks so darn cute its tiny version! This might be the reason that everywhere you look you can find little versions of your favorite cakes, pies, doughnuts and the list goes on. I wanted to be in too so I purchased this pan Chicago Metallic Commercial 12-Cup Mini Cheese Cake Pan in Amazon a few months ago to make mini cheesecakes. I really did not have the time to use them until last weekend.

When I bought the pan I only purchased one, I wanted to try it out before buying more. All I can say is that its great! It’s easy to use clean and it does not burn or scorch.

Warm Cinnamon Rolls with a cup of hot coffee or chocolate for a cold Sunday afternoon

Wow its been very chilly these past few days in the Republic. Particularly today! Its been quite some time now since we've had this kind of weather , which is quite unusual for the tropics.
Since it was so cold today or at least for me it was! I decided stay indoors  under my bed covers  watching t.v. so as soon as I had lunch I did just that.   That was until I heard my husband say he had to go to the supermarket . Just before he finished his sentence tI jumped up from the bed  and decided it was a great day to go and get butter. Yes butter I would be making cinnamon rolls today. I had meant to make these for quite some time now and never got around to makeing them. It was the perfect day to make warm, gooey cinnamon rolls. The recipe was one I found in the  internet but  I can't reamber where.   I just  know she claims they taste exactly the same as the ones from Cinnabon. All I can say is that they do not but they are quite good anyways.

So here is the recipe which I changed a little bit:
You can add nuts or peacans if you wish

Ingredientes:
1 cup of milk
2 eggs (beaten)
1/3 butter; softened
1/2 cup of sugar
1 ts of salt
4 cup all purpose flour
1 pkdry yeast

Filling:
1 1/2 sticks of butter
1 1/4 brown sugar
3 tbs cinnamon

Icing:
1 1/2 powdered sugar
2 onz cream cheese
1 ts vanilla
1/8 ts salt

Instructions:
Use the dough cycle of your machine and add all the dry ingredientes. When the dough cycle has finished , roll out on a floured board into a rectangle. Spread dough with softened butter and sprinkle evenly with the brown sugar/cinnamon. Roll up jelly roll fashion and cut with a sharp knife about 12 rolls about 2 inches thick. Let them rise for about 15 min. in a warm place. Bake for about 20 min. at 400 degrees or until golden. Take them out of the pan as soon as they are done and frost.

Hope you make them and enjoy with a cup of hot coffee.

Faliz Dia de San Valentin / Happy Valentines Day

Happy Valentines Day! I hope you ave a great day with your loved ones. If you still haven't bought your gifts you can still have time to make them.

Like every year at this time I made sweets to give as gifts and sell. I made chocolate covered marshmellows, heart shaped brownies and brownie pops.

If you do decide to make your own gifts its quite simple. Make your favorite brownie mix or chocolate cake bake them in a heart shaped pan. Once they are ready decorate them with ganache and sprinkles let them dry and place them in a small cellophane bag and decorate with a bow. For brownie pops you just have to place the pop stick before placing them in the bag.

For the marshmellows you place them on the sticks and dip them in the ganache decorate and let them dry. Place them in the plastic bag decorate as you wish.

XOXO

Compartiendo Galleticas con cafe /Lets share Coffee and cookies

Valentines is just around the corner and I wanted to share these cookies with you. At the same time I wish you can share these with your friends and loved ones.

I got the idea of these cookies from the blog Not Martha, she made these tiny gingerbread houses for chrsitmas. They were so cute and very uncommon. Instead of serving the cookies on a plate you place them on the rim of a mug or cup and it adds such a nice and personal touch to what ever it is you are serving.

In order to make the cookies you just need to use your favorite sugar cookie recipie and follow the directions as the recipe indecates. Cut them with your favorite cookie cutter and before baking them you cut a rectangle to form the slot. Please take into consideration the thickness of the rim where you will be placeing your cookies. I cut the slots on these cookies about half a cm.
Decorate them and bake them as you normally would. Leave them cool completely before placing them on the cups.

I hope you make them! Please send me the pictures so we can share.

XOXO

Its with profound sadness that I write to you today. As many of you know I live in the Dominican Republic which shares the island of the Hispaniola with Haiti whom has been living since Tuesday the horrors of a vast devistiation.

Fortunetly we felt the tremors but have not suffered any loss like our neighbors in Haiti.

The situtation in Haiti is grave. Supplies are running low and there is not enough food or water to feed the hungry. According to CNN 50% of Haitis population is under age. These are kids that are literally on the streets without food, water, clothes to keep them warm and even worse without knowledge of their families where abouts.

We ask that you please send in donations. Donate what you can even a can of sardines is enough to feed a hunry person. If you do not have the means to donate, then please help by extending a Ifprayer to the Lord and ask Him for Mercy.

If you are still unsure as to where to take your donations you can access CNN and there you will find of list of the diffrent instituations that are collecting all the supplies needed.

Thank You form the heart
