Deditos de Novia

Los deditos de novia son unas de las galleticas rellenas mas populares en mi casa. Los hago y al día siguiente no queda ni una. Estos de las fotos los hice antes de ayer y ayer en la tarde solo quedaban dos!

Los deditos de novia son una especie de masa dulce rellena de pasta de guayaba y cubierto por azúcar en polvo.

El origen como tal los desconozco, por mas que he buscado nunca he podido encontrar y me parece que no se hacen rellenos de guayaba en otros países. Se que en Venezuela los hacen pero rellenos de nueces también y por eso me supongo que están basadas en la galletas Árabes conocidas como Cuernos de Gacela o media lunas.

Lo que hace defeneciera los deditos de novias tradicionalmente hecho en República Dominicana es y de las media lunas es el relleno.








Los cuernos de gacela son rellenos con una mezcla de nueces, pistachos o dátiles con especies, mientras que los deditos son rellenos de pasta o mermelada de guayabas. Aunque ultima mente he visto otros rellenos como mermelada de ciruelas, fresas y uvas.



Espero que se animen hacerlos para que vean que ricos saben. Los pueden servir con un cafecito bien caliente, te o simplemente disfrutarlos así solitos. Hummm se me hace la boca agua!

Deditos de Novia or brides fingers if we were to translate the name are very popular in my family. I could make them one day and by the folllowing day there won't be any left. I made theses in the pictures on Wednesday afternoon come Thusrday they were all gone!



Deditos de Novias is just a sweet pastry cut into rectangles and filled with guava paste which melts while baking. After they are done they are coated with powdered sugar.



I haven't been able to locate the orgin of these cookies but I would guess they are the dominican version of the arabic kaab al ghazal, since we have a lot of arabic influence in our food . The diffrence being the filling.



The kaab al Ghazal cookies are filled with a mix of spices dates, nuts or pistachios whereas deditos de novia are filled with guave paste or jam. Although I have seen others filled with prune, strawberry and even grape jelly.



I hope you try them sometime they are very tasty and you can have them with a cup of hot coffee or tea or just enjoy them like they are.

Compartiendo Macrons con Jackie / Sharing Macarons with Jackie

Hola a todos espero que hayan tenido una feliz año nuevo!! Este año sera colmado de muchos retos para todos ya que tenemos que luchar para superar y sobre pasar todos los momentos difícil que pasamos en el 2009! Pero estoy super segura que con mucha fe y una mente bien positiva y enfocada cosecharemos cumpliremos nuestros deseos.



Y hablando de retos que mejor manera de empezar un año que haciendo macrons!


En días pasado entre al blog de mi amiga Jackie quien tiene un blog llamado Las Delicias Del Buen Vivir y vi que ella también estaba intentando hacer macrones que habían publicado en otro blog llamado Morgana Tartas con Magia y nos animo e invito a todos hacerlos y poner las fotos en su blog.

Me anime bastante porque mi primer intento fue hace ya mas de una año y medio y falle. En ese momento los hice amarillos rellenos de crema de limón y la verdad que quedaron deliciosos y listos pero se regaron en la plancha y fue un desastre. Me propuse mejorarlos he intentar hasta que me que quedaran a la perfección. En ese momento empecé a investigar y leer cuantos blogs e informaciones me cruzaban sobre estas ricuras . No obstante le di larga y larga asunto y fui postergando el asunto.


Hoy volví intentarlos de nuevo esta vez los hice rosados como los de Jackie y los rellene con dulce de leche aunque no creo que haya sido la mejor opción ya que encuentro que el dulce de leche compite y opaca el sabor a las almendras. Me parece que quedaron bonitos pero les falto el "collar o pie"en el bordecito así que tengo que hacerlos de nuevo . La tercera sera la vencida!

Hello, I hope you all had a wonderful New Year. May all your dreams come true this year, that is full of challenges. We must all work hard to surpass all the mishaps and problems that 2009 posed.
Speaking of challenges what a better way to start off the new year than making Macrons.
A few days ago I was reading my friend Jackie's blog called Las Delicias del Buen Vivir and I saw that she too was trying to make macrones and she invited everyone to make their own and post the pictures to her blog spot.
I got pretty fired up about it and decided to give this thing a second try. I made macrons a while back, like a year or so ago and they were very tasty but they spread all around. As soon as this happened I started reading everything about these delights but I never got around to making them again. Guess I was putting off the dificult task of mastering the macron baking experience.
Today though I took the challenge and made them at last. They came out quite nice although they are not perfect yet. They were filled with dulce de leche which is pretty popular around here but I think that it does not let the almond flavor stand out much.
I will make these once again to see how they come out. They say that third time is a charm so lest see!

Quiero darles las gracias a todos mis lectores y desde mi cocina hacia la de ustedes quiero desearles un Feliz Año Nuevo! Que el Sr. Todo poderoso les siga bendiciendo grandemente. Hoy concluimos la primera década de este siglo y año mas de nuestras vidas empezando asi un ano nuevo llenos de esperanzas y sueños nuevos. Espero que todos se encuentren bien y que puedan realizar todos sus deseos.

Galletas las amo pero las odio / Cookies I love them but I hate them!

Galletas Las Amo pero las Odio!


Amo comer galletas pero odio hacerlas! Cada vez que me mencionan que tengo un pedido para hacer galletas me da dolor de cabeza. No entiendo porque, aquellos que me conocen saben que soy una persona muy paciente y sumamente detallista.
Tanto es el fastidio para mi que el año pasado me compre una "maquina para hacer galletas" que supuestamente iba a vender durante la navidad y no se si fue por conveniencia o lo bien que guarde la dichosa maquina que no fue hasta hace una semana que me acorde del dichoso aparato.


En octubre de este año mi madre me dio a probar unas galletas buenisimas y enseguida le pedí la receta. Realmente no se para que se la pedí seria para tenerla guardada como otras tantas que andan por ahí, porque yo no iba hacer galletas! o por lo menos eso pensaba pues resulta que me puse a inventar con la receta y me encanto ya que es muy versátil y ademas me hicieron unos encargos y no me quedo de otra que ponerme hacer galletas!

Cookies, I love them but I hate them!


I love eating cookies but I hate making them! I think that every time an order for cookies comes in I get a headache! I can't understand my aversion to making them and all of those who know me know that I am a very patient and dedicated person so it can't be that fact that they take time.

Last year in november I purchased a spritzer which supposedly I was going to make spritz cookie to sell in December. I put away the spritzer so well that I totally forgot about it and it wasn't till last week that looking at a few pictures and recipies I realized I had forgotten to make the cookies.
The recipie was my mother's she gave it to me this october. I am not sure why I had asked her for the recpie because I was positive that I was not going to bake any cookies. I hate baking cookies! Till last week when yet another big order of cookies came in. They came out pretty well but they tasted even better!

Trufas de bizcochos de Navidad / Fruit Cake Truffles!

Primero que nada quiero desearles una Feliz Navidad y Prospero Ano Nuevo a todos! Que el Señor Todopoderoso derrame su bendiciones sobre ustedes.

Ahora lo nuestro les pregunto que se hace con 5 lbs de bizcocho de navidad dañado? Pues, trufas!!! Si trufas. Les cuento que hoy sin querer tuve un pequeño accidente con 5lbs de bizcocho de navidad. Sin querer calcule mal la cantidad de polvo de hornear y en vez de ponerle la cantidad necesario la duplique : (




Por mas oraciones que hice sabia que se me iban a dañar los bizcochos. Efectivamente me puse a hornearlos y subieron preciosos hasta que de repente se desplomaron! Que desperdicio 5lbs de bizcochos perdidos y materiales a la basura! De repente me acorde de unas trufas que leí en un blog de Bakerella y decidí ponerlos en practica. Claro las de ella son distintas ella las hace con bizcocho de chocolate pero nada quería probar a ver que pasaba y les cuento que quedaron preciosas.
No seguí todos los pasos ni la receta de ella pero si el concepto. Lo que hice fue que con el

bizcocho aun tibio hice las bolitas y las pase por chocolate derretido y finalmente las cubrí con grageas de colores.
Finalmente los envolvi y les puse la tarjetica y adivinen cual sera el regalo de este ano!

Now on to todays post. What do you do with 5 pounds of ruined fruit cake? Truffles!!! Yes, truffles! Today I had a mishap with some fruit cakes I was making. Instead of adding the amount of baking powder I was suppose to I doubled it : (



I prayed so much that the darn things would not go bad but unfortunately they did. At first the rose beautifully but all of the sudden the plubmeted! What was I to do with all that fruit cake gone bad!! All the ingredients were going to end up in the trashcan. Then I reamembered a post on Bakerellas blog where she makes these beautiful cake balls. I decided I was going to turn all that cake into truffles ant that I did. They turn out quite nice I would say.

I did not follow her recipe instead I rolled the cake while it was still warm into small balls. Then I rolled them into melted chocolate and finally dipped them in sprinkles.

Finally I put them into a clear plastic bag and added a little note to each one, Guess what everyone will be getting for christmas!

Nuevo Diseno/ New blog Design

Antes que nada quiero felicitar a todos por la navidad que definitiva mente ha llegado.
En el día de hoy estoy estrenando un nuevo diseño y en los próximo día habrán mas cambios.
Les prometo que para la semana que viene le agregare una entrada nueva y mas recetas.

Pasteleria Molecular y Esferificacion / Molecular Gastronomy and Spherification

Esferificación y Pasteleria Molecular

En esta entrada de hoy les quiero hablar de unas clases que tome en Risk Escuela Culinaria con el Chef Ariel Penalva. Que clases!!! Las clases consistían en aires, esterificación, trabajo con nitrógeno.
Se que muchos se estarán preguntando que es eso de esterificación y Pastelería molecular pues les cuento que es Según sus creadores, "Es la ciencia dedicada a desentrañar los procesos científicos que esconde el trabajo diario en la cocina y el uso de métodos industriales en la alta cocina. Bases de la cocina molecular: Construcción y desconstrucción" Esta rama de la gastronomia comenzó en el 1988 y sus padres fueron Herves This químico de la INIAF (Instituto Nacional de Investigación Agrónoma de Francia) y Nicholas Kurtis profesor de la Universidad de Oxford.

La primera vez que vi hablar de esto fue por medio a un reportaje de "Él Bulli" y su dueño Feran Adrià que presentaron en Discovery Channnel hace unos cuantos años atrás. Para serles sincera en ese momento pensé "este tipo está loco pero más loco aun quienes le pagan por comerse esos inventos". En mi cabeza no cavia pagar tan caro por una comida hecha a base de espuma, geles, bolitas y mucho menos nitrógeno. Quien se iba a sentir satisfecho o a que podía saber eso? Termine de ver el programa y de verdad que no me causo ningún tipo de impacto o por lo menos eso pensé en el momento. Cuan equivocada estaba porque les juro que aun mantengo en mi mente escenas de ese programa como si lo estuviera viendo en estos momentos. Es como esas cosas que uno no puede explicar una cosas que de verdad me parecía carecer cualquier tipo de importancia. Hoy día a muchos años de haber visto ese programa les cuento que el tema despierta un interés y una emoción que casi lo puedo sentir. Pronto aprendí que no se trata de solo satisfacer el hambre sino despertar y satisfacer todos los sentidos!!!

Por cosas de la vida en días pasado asistí a otras clases en la Risk Escuela Culinaria cuando su dueña la Chef Maribel Risk nos puso el tema de la esterificación. Enseguida mi mente empezó a volar. Hacía tiempo que me venía preguntando donde yo podía conseguir el caviar lindo que le pone encima a los mini cheesecakes. En ese mismo momento y sin lugar a dudas supe que debía de tomar estas clases.

Me daba igual la espuma y terror el nitrógeno, aprenderlo y no aprenderlo me daba lo mismo yo lo que quería era aprender hacer el caviar ! Pero para mi sorpresa quede cautivada con la espuma y el aterrante nitrógeno. Que chulería !!!! Como decimos nosotros. Sin lugar a dudas es concepto muy distinto a lo que estamos acostumbrados. Para muchos un tema desconocido para otros es un insulto y para otros tantos todo un mundo de posibilidades!! Hoy me uno al grupo de los que le ven la gastronomía molecular como todo un mundo de posibilidades. Sin proponérmelo y mucho menos saberlo he abierto una caja de pandoras, no aguanto hasta tener en mis manos el kit para trabajar, inventar y crear. Dona Maribel y EL Chef Ariel Peñalava no saben lo que han hecho.

Aun no me siento muy segura de trabajar con el nitrógeno pero se que algún día no muy lejano lo hare porque el trabajo es precioso y para nada común y mas para un país como el nuestro tan caluroso.

I want to dedicate this post to sharing with you my sexperienve during a Molecular Gatronomy course I took last Saturadya at Risk Escuela Culinaria (Dominican Republic) with the Chef Ariel Penalava. all I can say is What a Class!! It consisted in working on spherification, nitrogen and foams. Just about now many of you might be thinking " and exactly what is this molecular gastronmoy thin?" According to its creators it is a scientific discipline involving the study of physical and chemical processes that occut in cooking. It pertains to the mechanisms behind the transformation of the ingredientes in cooking and the social, artistic and technical compnents of culainary and gastonomic phenomena in general -Wikpedia.

Molecular Gastronomy is bades on the construction and desconstruction and it began back in 1988 with its founding father the chemist Herves This and Nicholas Kurtis.

The first time I heard the term Molecular Gastronomy was a few years bak on Discovery Channel they were airing a show on "El Bulli" and its owner a Spanish Chef names Feran Adria. to be honest I was not excited or anything and thought that the guy was insane and even more insane wote thoes who paid a lot of money just to eat foam, jellies "caviar" and nitorgen cooked foods. I mean how can anyone satisfy their appetite or even worse would this food even taste good. I did not pay a lot of atention to the show or at least I thought I didn't looking back I still have vivid memories of the scenes aired that night. Now I can say that whole topic really excites me and I have learned that you are not only suppose to satisfy your hunger you are to waken each and every one of your senses!!! How many foods can do this?

A long time has passed since I saw that show, and i had forgetten about the whole thing until a few weeks ago when I took another class at Risk and the owner chef Maribel Risk made a comment about a course they were planning to teach and where they were going to teach us how to make caviar. Write away I kenw I had to take this course. It was the ansewer to my prayers I wanted to learn so badly how to make those cute little fruit caviers that are toppiong many cheesecakes out there.

Didn't care much about the foam and working with nitrogen scared me to death all I wnated to do was to learn how to make the sphere. To my surprise I enjoyed every minute of the class even working with the foam and the nitrogen. It is something totally different form what we are use to seeing and eating!

For many molecular gastronomy is somehing that they simply don't know about or don't care about, for others its taboo and for other incluiding myself it is a world of infinite possibilities.

I can't wait to get my spherification kit and start experimenting. Not sure though about working with the nitrogen but knowming me I know that I will get around to it in the near future. Specially if the climate continues to be so hot.
